Signe Lykke has a background in nutrition and health and suffers from non-allergic food hypersensitivity/food intolerance herself. Coupled with the fact that she very much likes being creative in the kitchen inspired her to write both this and her previous cookbook, Food without Milk, which was published in Denmark in 2011.
